Vegan and Vegetarian (Lacto-Ovo) Meals

Yes! I’m Vegan because I want plant-based meals and I love my plant based-meals. It may seem like a struggle for most people to give up on meat and commit to vegetarian meals, but it really isn’t as bad as you think it is. I have friends asking me how I manage to restrain myself from meat all the time. Well, I’m just devoted to healthy eating and I believe that a good outward appearance comes from nourishment from within.

Since I make my own meals, I’m forced to learn new recipes and ideas to cook decent meals for myself! I felt like blogging about food today, its been a while since I’ve blogged about my diet anyway!

1. Chickpea Tomatoes

Peel tomatoes and cut them into smaller blocks so it is easier to smash when cooking later, while at it bring water to boil chickpeas until completely soft. Then, dice shallots and garlic cloves and mix all spices into a saucer. Heat virgin olive oil in a pan at low heat. Fry shallots until translucent and garlic is soft. Add spices into the pan, when well mixed add tomatoes and slowly smash. When all ingredients in the pan start to shimmer, bring to taste (add more sugar/salt if necessary). Lastly, add chickpeas and mix well. Ready to serve.

Ingredients

Virgin Olive oil (5 tbsp)

Chickpeas (desired amount)

Tomatoes (2 peeled plump tomatoes)

Shallots (3 small shallots, diced)

Garlic (2 cloves)

Paprika (1/2 tsp)

Sugar (1 1/2 tsp)

Salt (1/2 tsp)

Pepper

Paprika

Italian Herbs

Oregano

2. Creamy Vegetarian Mushroom Noodles

5 tbsp. extra virgin olive oil

4 ounces Cremini mushrooms

Salt and black pepper

4 garlic cloves (chopped into small pieces)

1lb of Zucchini pasta

1/2 heavy cream

Lemon juice (squeeze desired amount)

2 tbsp. unsalted butter (cut into small cubes)

Preparation:

Slice the mushrooms and cut the shallots, while waiting for your pan to heat up. Pour extra virgin olive oil into your pan and toss the mushrooms and garlic in and skillet over low heat. Meanwhile, bring water to boil to cook noodles. Remember to also saute until mushrooms are cooked. Add salt and pepper to the mushrooms and bring to taste. Then, add heavy cream to mushrooms and garlic and stir together. When noodles are ready, add them into the sauce and stir again. Add unsalted cubed butter into the noodles and let the noodles sit for a while. Later, squeeze desired amount of lemon juice and stir noodles again. Bring to taste and add more salt if necessary. Finely chop scallions and sprinkle onto the noodles. Ready to serve.

The preparation time is approximately 15 minutes and cooking time is about 40 minutes. This dish is extremely filling so I’d recommend that you share it with someone.

3. Vegan Burrito

Smash half of an avocado into a bowl, add desired amount of salt, pepper and Italian herbs. Then, boil corn kernels and add it into the guacamole (mix well). Heat tortilla in a pan, while tater tots bakes in the oven. When tater tots are ready, place them onto tortilla along with tater tots and lettuce.

Ingredients

Pre-washed Romaine Lettuce

Half an avocado

Corn

Cherry Tomatoes

Italian herbs

Salt

Pepper

Tortilla

4. Smoky, Spicy Vegetarian Pasta

8 ounces spaghetti

Salt and pepper

5 tbsp. virgin olive oil

1 tbsp. crushed red chile flakes

4 garlic cloves (chopped)

2 ounces of Cremini mushrooms

Preparation:

Bring water to boil and cook noodles until soft. Heat cooking pan at medium heat and add virgin olive oil. When the oil is heated add garlic and red chile flakes and allow them to shimmer. Then, add mushrooms and stir fry. Later add salt and pepper. Lastly add noodles and mix. Ready to serve.

Preparation time is approximately 5 minutes and cooking time is 15 minutes.

5. Oatmeal

Blueberries or Any fruit you desire you eat

Oatmeal

Harvest Crunch Cereal

As a matter of preference, I prefer blueberries, strawberries or bananas in my oatmeal. After cooking the oatmeal, I’ll add some brown sugar or honey to enhance the taste.
